Pasta, Rice and Grains Sandwiches and Snacks Vegetarian

Grilled Macaroni and Cheese Sandwiches

I know what y’all are thinking…sandwiches? Really? But these aren’t just any ordinary sandwiches, these are creamy, delicious, macaroni and cheese sandwiches. I know they are easy to find on the internet and you probably don’t need me to tell you how to make them, but would you really have thought about them if I didn’t mention them today? I think not. So, here they are and they go perfect with my Split Green Pea Soup with Crispy Beef Shreds.

My children and the grown ups in the house, all find these irresistible. I love macaroni and cheese and can eat a whole box by myself. I think this comes from my childhood trips to Lindy’s after a long evening of shopping at Brent Cross where we would then indulge in some absolutely delicious, hot and creamy mac and cheese and cauliflower and cheese (another favourite.)

These days  I don’t even bother making mac and cheese from scratch, I almost prefer the easy boxed versions! I like to get the Annies brand organic shells and cheese.

Here’s how easy this is:

Grilled Macaroni and Cheese Sandwiches

 

A box of good quality macaroni and cheese

Slices of good sandwich bread

butter

Slices of good Cheddar Cheese

 

Make a box of mac and cheese. Put aside.

Slather bread with butter and place buttered side down on a hot griddle or fry pan.

Place a slice of cheese on one piece of bread and a spoon of mac and cheese on top of slice of cheese.

Top with the second slice of bread.

Watching to make sure it browns and not burns, flip the sandwich to brown the other side.

By this time, the cheese slice would have melted and the mac and cheese will be heated through again.

Cut in half, and enjoy!

    After clicking back through your archives, this is what finally made me subscribe! (Husband’s going to be so happy, lol, he asked me just last week if it would be possible to make a grilled mac-n-cheese sandwich!) However, I would urge you to make your own mac-n-cheese. It’s really so very easy and you can make a huge pan and freeze the leftovers… you could even freeze in slices perfect to make mac-n-cheese sandwiches. I don’t have a food blog so I can’t give you a link to click, but if you’d email me using the addy for this comment, I will send you my recipe for easy wonderful mac-n-cheese. Off I go to thaw some mac-n-cheese from last week.

    My grilled-cheese-sandwich AND mac&cheese-crazy son would love this sandwich. I think I saw something similar on Food Network – being sold out of a grilled-cheese-sandwich food truck somewhere. Maybe Seattle, and I thought now there’s an idea. And I promptly forgot about it. Thanks for the reminder!

    I dear! I better not let my rather overweight son who adores cheese see this recipe! He puts cheese almost anywhere he can.
    I am sure this is absolutely delicious, though. Maybe some day I’ll make one for him, but tell him it’s a secret recipe and he can’t have it!

      I have one of those…my daughter puts cheese on everything including already cheesy mac and cheese. Of course, there’s no such thing as too much cheese 🙂
