Wow! I can’t believe it’s Friday already and I haven’t posted anything new for a week! Sorry. It’s just this time of year I guess. The kids are on the last leg of school and there is something going on every week for one of them. I have four kids and I get stretched pretty thin!
Laith had a little musical program at his school and it was so much fun to watch him and his little buddies. They are so cute and enthusiastic and innocent. To be that young again!
I hope you all had a wonderful Mother’s Day on Sunday. I had a fantastic time. Trace and the children made me breakfast and each had a gift they had picked out for me. There was also a collection of body lotions and shower gel from Bath and Body Works that didn’t get photographed but I will tell you that I smell just like Twilight Woods!
It was very nice indeed. We then headed for the mountains since it was an absolutely gorgeous day. We just drove on I-70 and ended up in Silverthorne and had lunch there. It was nice to sit outside in the sun and let my body soak in all that warmth and listen to the sound of the babbling brook as we enjoyed our lunch.
I really am very thankful to live in such a beautiful place.
After our four days of beautifully warm and summer like weather, we were struck with two whole days of nothing but rain. I swear, all night and all day, rain and hail in our area, but I know other parts of Colorado got 18″ of snow! Snow in May! On Wednesday, it hailed continuously for an hour! I know because I watched these white, polystyrene balls bounce off my balcony. It was nice to get rain because Colorado is pretty much a desert environment but continuously for two days was a bit much! However, today the sun is shining and it’s a brilliant 65 degrees out there. Perfect.
You may have noticed that this isn’t a food post! I have been cooking very little these past few days because of my mobility issues. I hope to see that change very soon since I did finally go and see my rheumatologist yesterday. I had about eight needles stuck in me and if you know me, you will know that I don’t do well with needles! My knees were so bad that she had to aspirate them and to that she had to numb them…all with huge needles. Then she gave me steroid shots and drew my blood…so count them…eight stinking needles! I am way proud of myself though! So, I left the clinic yesterday feeling like I was part of Barry Bonds’ inner circle but hey, I could walk without pain…almost. My doctor said to stay off of my feet for a couple of days and so I am listening to her, even though I just walked all around huge ass Costco to do some shopping. But, I am putting up my feet now and typing this.
I have been trying to get some of my baking done for when my family arrives in three weeks. I baked about three dozen scones and froze them, and two, delicious smelling, cherry Madeira cakes.
We will be picnicking almost everyday and I thought some portable baked goods wouldn’t go amiss. I will post the recipes up very soon but I would like to have some pictures to show you so it might be a few weeks till they get on here. I also, made my moussaka that is now sitting very comfortably in my freezer chilling. I did photograph that today so I hope to get that recipe out to you tomorrow or even tonight.
My weekend plans have a lot of baking involved. I really need my knees to be in shape so I hope to not overdo anything today (too late.) I have to make a huge batch of cookie dough and freeze and also, my utterly yummy blueberry muffins. All of these baked goods freeze beautifully and all you have to do is reheat them in the oven and they are like fresh. Most of these goods will be used for breakfast or picnics and I need to do them now so I can concentrate on the dinner preparation when they are here. What can I say? My family loves to eat!
