I wanted to start by thanking everyone who commented on my last post. It was heartwarming to hear from so many who also live with auto immune conditions, and to learn about the challenges they have overcome and the changes they have made to their life to find relief. It helps me to know that I am not alone in this and all I have to do is reach out to find friends. Thank you. It was also interesting to learn that this food problem is just as prevalent in other countries. I knew it affected other countries but I had also learnt that many countries overseas had stricter laws concerning food additives and preservatives. It seems that it is not quite the case. They may be restricting some but they definitely aren't rushing to ban all of them. I do know that the US is the worst for what it deems acceptable for public consumption. So much so, that even China and Japan and many other European countries are restricting certain food imports from the US. I just hope our food people wake up and realise what the public really wants. White Chocolate and Pecan Oatmeal Cookies
This past week has been a bit edgy for me. I've been a tad irritated and that irritation has turned to anger, frustration and resentment, not necessarily in that order. So, when a fellow blogger friend, Ansh from Spice Roots texted me for a coffee therapy session, I texted back rather quickly with a time and day. A few cups of coffee and a great chat and things looked better. What's been rubbing me the wrong way? My food, or rather, big agriculture and corporate control of our food. A little over a year ago, I decided to stop my RA medication and try to wing it with food. My medication, though it helps me keep my RA under control and somewhat pain free, it also comes with a slew of side effects that may harm me down the road; the biggest downer being the whole death side effect. It was during the research of food that could help my autoimmune condition that I learnt so much about organics, natural, conventional and genetically modified (GMO). I also found out that auto immune conditions are directly related to environmental issues and food. Sweet Potato and Ground Beef Phyllo Cigars
My time off, so far, isn't spawning any brilliance or creativity. In fact, I am further behind now than I was while I was regularly blogging! If that isn't bad enough, we lost an hour yesterday with Daylight Savings. There is no way I'm catching up with anything. How is everyone doing? Is anyone having a leisurely time of it? Or are we all as hectic as each other in our respective routines? I have been working on some projects however, and once they get going I will tell you all about them. One productive thing I have done the last few weeks, is finally getting some business cards printed! It only took 3 years but here they are; what do you think? I had my own photographs printed with all my essential information on the back. I love them so much that I don't want to give any away! In between my hectic weekdays, we do get a calm weekend and if it's the weekend my husband is off, it's incredibly relaxing! We just seem to lounge the day away. Blood Orange Sherbet
Yes, I understand quite well the untimeliness of this post, as most of us are still experiencing stormy, snowy conditions and even a Polar Vortex or two. In fact, as I type this post on my computer, the snow is falling serenely outside of my window, erasing the tyre marks of the cars that have passed not too long ago. The footprints of the committed joggers have all been covered up again and still it falls; silently, beautifully and innocently. Of course, there was nothing innocent about it a few hours ago when I was driving my daughter to her babysitting job. Let's just say, three lane roads became two lane roads for cars going slightly faster than a snail, and even then I had problems staying in my lane. I couldn't control my 4x4 SUV that's made for snowy weather! I was finally glad to be home, nice and warm enjoying a coffee and some.....crumpets :) So, back to this sherbet. I know, I know, it's totally inappropriate for these winter days but I couldn't resist the blood oranges. They make my heart sing when I see their beautiful colour in all the dreariness of winter. Blood Orange Upside Down Cake
Hello my lovelies! How are you all doing? I'm not back quite yet but I did want to share a recipe or two before their season ends. The one problem with trying to write a seasonal blog is that you can't really take time off! You enjoy the seasonal fruits and vegetables, and cook and bake with them, but unfortunately you can't sit on your posts because then the season is done. I made the Blood Orange Upside Down Cake for my Super Bowl dessert and that was at the beginning of the month. The blood oranges are in season right now and in plentiful supply at the moment. I thought I'd better share my recipes before they're all gone! This cake is a cross between an upside down cake and a polenta cake. I was also trying to make it an olive oil cake but my olive oil is pretty strong so I opted for part butter and part avocado oil (which is very neutral tasting). I didn't want the oil to overwhelm the subtle orange notes of the cake. This cake is quite wonderful, if I do say so myself. It's moist, with just a little texture from the corn meal and the beautiful blood oranges on top are gorgeously candied and sweet. It didn't last very long at home.
