Beautiful mounds of purple and green jewels, piled up high in their punnet chests, was the scene that greeted me when I entered my local Whole Foods the other day. It literally took my breath away when I saw all those gorgeous figs cascading down the display. I had, however, already bought my figs, made and devoured this tart but the figs have been gorgeous and plentiful this year. Most years I am lucky to get a glimpse let alone actually buy some. This year I've bought nice, big packages thanks to Costco. Usually in our house, the figs are gobbled up fresh without any fuss. This time when I saw the purple hued gems at Costco, I knew I wanted to do something more with them. A tart seemed the perfect vessel for these juicy morsels, but not just a plain tart, a cheesecake tart with a ginger snap crust (if you don't like ginger snaps you can use graham crackers or shortbread for a milder cheesecake base) To make life simpler for myself and also, to not overpower the figs with too much cheesecake-y goodness, I chose to do a simple no bake cheesecake as a base and have caramelised figs as the star topping. The Cheesecake Tart with Caramelised Figs turned out really nice and ... continue reading...
Egg Roll Borek
As I was pondering today's post, I realised that the last few posts have all been sweet things; goes to show what our body craves when we are fasting! That's very true, at least for me, that after a day of fasting, I was going insane for something sweet. Despite having dates with which to break our fast, I still had the urgent need for some down right unhealthy sugar. Apart from what I posted here during Ramadan, I didn't make anything else. There just wasn't any time, that and I was exhausted! I relied on ice cream, lots of ice cream. Let me tell you that Talenti Gelato makes an awesome salted caramel gelato and caramel cookie crunch...yum. I lived off these two flavours every night. Now, that I am not so exhausted from late nights, I am thinking to put my ice cream maker to use making my own. It's been neglected this summer. I've been, looking at all these delicious sorbets, ice creams and lollies people have been posting all over the blogosphere, and after I drool uncontrollably all over my iPad, I think that it's about time I made some. I put both my ice cream bowls in the freezer at the first hint of summer and they've pretty much sat there chilling. Time to change ... continue reading...
Date Ma’amouls
I am finally feeling less like a zombie and more like a very tired human. The last ten days of Ramadan were tough but very rewarding and fulfilling. Despite the 3 or if you were lucky, 4 hours of sleep, I was pumped. There is nothing like the feeling of the last stretch of Ramadan; the achievement of fasting, succeeding in the goals you set for yourself, the resolutions you complete and the deep devotion and satisfaction you feel at the end. After three days of fun and festivities, although they too were tiring, we found ourselves relaxing and taking it easy. Hanging out with friends and enjoying the holiday season was great fun for me. We enjoyed a lovely Eid party with some great friends and then a Sunday filled with a carnival and games at the Islamic Centre. A nice way to finish off a wonderful holiday. Saturday night we had a dinner invitation to a wonderful friend's house and since I didn't have to cook that day, I spent the day relaxing and baking. It felt so good to be back in the kitchen getting knee high in flour and butter. Ideally, I would've liked to have baked my cookies and scones before Eid as they were supposed to be gifts, but the last few days were so ... continue reading...
Forelle Pear and Thyme Frangipane Tart
I can't believe that Ramadan is already winding down with it being in the last 10 days now. As much as it seems such a hardship to fast and keep insane hours, I find it amazing that it goes by so fast. The last 10 days of Ramadan are the most important and it's where we are encouraged to amp up our prayers and night worship. We've been going to the Islamic Center every night either to break fast and stay for the evening congregational prayer or eat at home and then go to the service. This means that every night is a late night for us. I have given up sleeping. So, if you see me comment on your sites at 2 or 3 in the morning, don't be surprised. The end of Ramadan is scheduled for August 8th pretty much all over the world. That's when the new moon will be visible. August 8th will see an early morning congregational prayer, an Eid breakfast at the Center and then the day to enjoy with friends and family. The end of Ramadan is known as Eid ul Fitr. Eid ul Fitr is a day of much joy and happiness because, for one, we can eat again! It feels very odd on Eid morning to have my coffee and eat something before heading to prayer. And then all day, I am always second guessing myself the ... continue reading...
Kunafah Rolls
Hi lovely readers! The following post is the guest post I did for Lail at With a Spin yesterday. I am posting it here on my site too so you can have access to the recipe. I had some readers email me requesting that I make it available here too. I hope you will still go and say "hi" to Lail over at With a Spin. Thank you for reading and I will see you here soon. Hope you are having a great weekend. ********************************* It is an honour to be guest posting over here at With A Spin. I am Nazneen from the blog Coffee and Crumpets. When Lail asked me whether I could write a Ramadan post for her I agreed enthusiastically. I have gotten to know Lail over the last few months and I am in awe of her dedication to her family, her career, her blog and her heritage. I have learnt more about Bangladeshi cooking from Lail than from my Bangladeshi friends here! I hope one day to have the occasion to meet her when I am going through Texas again. Lail asked me to share a recipe that is close to my heritage or upbringing. I thought about that for a while and I remember emailing her and telling her that I am of a very confusing heritage! My family is from India but I was born in Saudi ... continue reading...
