Onion Bhajis | Onion Fritters

It's that time of the year again, the month of sleep deprivation and abstinence from all unnecessary indulgence. The time of the year where there are millions of cranky Muslims (though according to the media, these millions of Muslims are apparently always cranky) going about their daily life whilst undergoing caffeine withdrawal, nicotine withdrawal, expletive withdrawal and a lack of sex. The last condition can make men very cranky whereas us women thankfully embrace this month :) But all kidding aside, as much as I make Ramadan sound like a chore and a hardship, it's the one month Muslims look forward to like no other. Why is this month so important to Muslims and why do we eagerly wait its appearance every year? For anyone of faith with a belief of a greater power; you will understand. Ramadan offers the chance for Muslims to gain endless rewards whilst erasing sins. Every good deed and action is doubled in reward. This month Satan is chained up and cannot whisper in our ears to lead us astray. So, we use this month to perform great deeds and give charity knowing that Satan cannot interfere and all the while racking up our brownie points. Ramadan is the ninth month of the ... continue reading...

Masala Kofte | Indian Meatballs in Masala

There has been a serious lack of inspiration lately and I don't know if it's the heat, the fatigue from the move or just the unfamiliar surroundings. It takes a while to settle into a new place and even though in my head its home, it is still new and I am trying to get used to cooking in a smaller kitchen and then setting up my "photo studio". It just all seems too much and hence the few and far between posts lately. I know having all the children home has disrupted my train of thought and things I plan are not happening accordingly. The schedule is all off, we get up late and go to bed late and I don't like that. I still wake up bright and early but lounge around in bed so long because I am still tired and before I know it, the clock is signalling a ridiculous time! If that's not bad enough, next week starts the Islamic holy month of Ramadan where all Muslims fast from dawn to dusk. I don't know how I'm going to get up at 4am to eat and the lack of sleep will be a killer. I will talk more about Ramadan in the next post and maybe share one of my favourite Ramadan recipes. To get out of this funk I seemed to have slipped into, I decided to throw a party at my new place and invite ... continue reading...

Larb Gai | Laotian Chicken Salad

First of all, I wanted to thank you all for your wonderful comments of support on my last post about my RA. It was really lovely reading all your warm words of encouragement and that alone has made me much stronger and more determined, so thank you! It was also nice to hear from many of you on the issue of GMOs. I am a glad that I am not the only one slightly freaked out about what we are eating and what we are feeding our children. It was great to get information from different parts of the world and to see how GMOs are treated there. I still find it very worrying that I cannot pick up a package of anything and be confident. Summer time is one time I stock my house with some packaged chips, crackers, cookies etc. The children are all home from school and they raze through the pantry, every hour it seems. I cannot keep up with the baking and cooking so I keep ready made stuff on hand. However, it's totally impossible to buy something from a regular grocery store and be confident that even though it might not be healthy; it is at least made out of "natural" ingredients that grew in a field and not in a lab. Anyway, on to today's recipe. On the rare occasion that I find myself ... continue reading...

Those of you who have been reading my nonsense for a while now, will know that I live with Rheumatoid Arthritis. I say, "live" and not suffer, because I don't really suffer. It's a part of my life now, and I just have to get on with it. It is painful at times and there are days I am so tired I can't get out of bed, and days I am in so much pain I can't move, but there is no point in complaining. It is what it is. For those who aren't familiar with RA; it is an auto immune condition where my white cells decide to attack my healthy joints and tissue because they mistake them for foreign bodies. This results in inflammation and swelling of my joints and ligaments rendering me immobile at times. The first few years of my life with RA, I was resigned to the fact that I will forever be on strong medication and constant doctor care. However, in recent years and mainly because health insurance at my husband's work was so terrible, I was prompted to research alternatives to medication. My main focus was on diet and food. A few years ago, before I moved to Colorado, I went gluten free. That was a great step for me and helped me immensely to lose weight and straighten up my diet. The key to ... continue reading...

Pomegranate Citrus Chicken and Father’s Day

Pomegranate Citrus Chicken and Father’s Day

I have realised in the last week or so, how absolutely exhausted I am! I guess in the heat of the moment, adrenaline pumping and the reality that it has to be done, you plough on. It's only when it's all done and you finally take a breath that it hits you. Sheer and utter exhaustion!  I have been pottering around the house working on little projects and then the realisation dawns on me that I haven't made dinner, haven't photographed dinner, have no clue what's for dinner and it's 7 pm! This explains my week and my lack of presence. I hope you all had a great weekend and are off to a superb start for the week. I thought I'd share some photos of our Father's Day hike to St Mary's Glacier and a quick recipe for some incredible Citrus Pomegranate Chicken that I made for our picnic lunch.  My husband loves picnics but we never seem to have much luck with the weather. Whenever we plan a picnic, it's either so windy that our food and plates start flying, so cold that we have to huddle together for warmth or as was the case on Sunday, we start hiking and it starts hailing and the temperature plummets to 48℉ (9℃). The white stuff falling and on the ground in the photo below, is ... continue reading...
