I want to say that I was perusing a copy of Cooking Light magazine the other day, sitting in my cosy reading nook, with daylight filtering through gauzy curtains with a cup of chamomile tea sitting on a tea table near by, but the reality is that I was clicking my mouse on the arrows on the Cooking Light website sitting on a hard Ikea office chair at my desk. I love that word, "peruse", doesn't it conjure up warm and fuzzy images of sitting in a big comfy armchair with a cup of steaming tea and leisurely thumbing through a book or magazine? I miss the days when we just had books and dusty old book shops. Even in this day of iPads, Nooks and Kindles, I still prefer to buy a book. Don't get me wrong, I am a huge electronics and technology geek. At this very moment I am typing this draft on my Wordpress app on my iPad. Convenience. I love my iPad, it does everything that my computer can do but in a handful. But reading a book or looking through a magazine is just not the same on an electronic device. I enjoy the feel of paper in my hands, the feel of the page as you turn it and the smell of the aged pages ( though many make me sneeze and itch!) As much as I am modern and love all ... continue reading...
Young Winners
It's been a hairy couple of days. I have been trying to transfer my web hosting company and as many of you may already know, that is never an easy affair. The long hours of sitting on your butt trying to figure out if all of your files made it over are not my idea of fun. Thankfully, my new hosting company rocks. They have been great and transferred over all my stuff and showed me how to do the various things that need to be done to part ways with the other hosting company. I have learned a lot the last few days and feel like some computer wiz now! The downside is that during the transfer, I think I lost a couple of valued comments and I do apologise to my friends who may not see their comments posted. Please leave me another one! All this transferring hullabaloo made it impossible for me to update my site but it did give me a chance to visit blog buddies and discover some new ones too. It's always nice to find new blogs that you just "click" with. I wanted to share with y'all, something fun that my daughter, Sahare and her youth group were involved in on Monday. Their youth group leader organised a dessert competition for them and even though there weren't many entrants ... continue reading...
Three Berry Cobbler
Last weekend, we had a small family party for Laith and since it was Memorial Day weekend here in the US, a cookout seemed the obvious choice. Most Bank holidays/ Federal holidays that fall in the summer are immediately classified as "cook out" holidays. There is nothing better than breaking out the BBQ grill and throwing on some meat and vegetables to enjoy al fresco. The supermarkets have grand sales on meat, meat and more meat. Along with the meat, there is the stuff that goes well with meat: corn, potatoes, baked beans and so on. I, too, love eating off the grill and keeping the kitchen cool by doing as much as I can on the hot coals. We have both a gas and charcoal grill and on Saturday, both grills were aflame. As much as I didn't want to cook indoors and to turn on the oven, I had to make dessert and those potatoes that go so well with...meat. There are sweet things you can make on the grill: grilled peaches with ice cream, grilled bananas with Nutella (very yummy) but I didn't want just fruit; something a little bit more festive was in order and it did have to double as a birthday dessert. Besides, a BBQ and cobbler are synonymous with each other. I tried very hard to ... continue reading...
Marvel Superhero Cakelets and a Birthday
May has been a whirlwind of activity. Generally, May is quite busy for many; finals, end of school year, graduation, end of school concerts and parties and so on. In my family we have a few birthdays and the most important birthday of all, my baby Laith who turned seven on the 23rd. My brother came up from Houston and all the kids were excited to have him. They love their Uncle. Ali was here only a week and it went by so fast. One minute we were anticipating his arrival and yesterday we were dropping him off at the airport. The days leading up to Ali's arrival were a bit hectic and so, I didn't have a plan of attack when he arrived. We kind of just winged it half the time but it was fun. I always like to have at least a dinner plan so I can treat him to some good eats; I didn't have that either. A bit pathetic really. However, his only request was a sticky toffee pudding which I was more than happy to make. We also had a rhubarb crumble and a three berry cobbler throughout the week. Yes, we only ate dessert :). Whilst, he was here, we did celebrate Laith's birthday with dinner out and Ali also had the pleasure of watching me decorate 24 Marvel superhero cakelets. Since ... continue reading...
Warm Quinoa Salad with Potatoes and Green Beans
Spring seems to have finally arrived in Colorado and we have been enjoying beautiful sunny days interspersed with the usual, magnificent thunderstorms and windy days that make springtime here such a delight. It has been quite hot already and I am a little worried about the upcoming summer. The Sun burns in Colorado. We are closer to it and since it's a desert like environment here, the Sun beats down hard and hot. One of the many advantages of the beautiful weather is how husbands suddenly want to become cooks. I think, it's an ego thing, as usual. Sunny days means grilling and BBQing, and somehow that is a man thing. If I ask my husband what he wants for dinner, his reply is "Want me to grill?" "Do we have stuff I can grill?" and so on. Which is great for me but I wish he would give me some advance notice, because even though grilling is easy and tasty, it requires some thought like what meat to defrost and what kind of cuisine and side dishes? A great cookout starts with marination and ensuring the meat is soaked up with moisture and flavour. Even hamburgers do better with some seasoning and some time to relax before being thrown on a screaming hot grill. I think this ... continue reading...
