Spaghetti With Easy Tomato Sauce

Spaghetti With Easy Tomato Sauce

Hello Friends!! It's been a while, almost two months in blog years! I took a small break and escaped without children and husband to Houston to visit my family and friends. I only went for five days but I am quite certain I put to use every single second of those five days. I had an absolute blast. I attended a dinner for the newest member of my family, a beautiful, baby boy born to my cousin and his wife. Almost everyone was there and it was so nice to see all my uncles, a couple of aunts and most of my cousins. Of course, my dad and brother were also there. I had a chance to visit with my best friends and it felt like I had never left. I am very fortunate to have such wonderful friends and family. Now, I am back to the grind; busy with the children and their school, volunteering at the mosque, and this week, with the preparations for the second Islamic holiday of Eid ul Adha. This Eid celebrates the pilgrimage to Mecca which many fortunate Muslims are completing today. Today is the Day of Arafah where all the pilgrims gather to ask forgiveness of their sins and acceptance of their Hajj (the pilgrimage.) It has been said that the Day of Arafah (called that because the pilgrims ... continue reading...

Chicken Enchilada Casserole

Chicken Enchilada Casserole

Wow! It's been a week since I have even checked on my website, let alone write anything. I do apologise for my lack of consideration and will not offer any excuses...well, maybe a couple. It has been a hectic few weeks but I hope in a few more it will settle down. As you all know, I have four children, all in various schools with their separate timetables and special events. For the past three weeks I have been attending parent teacher conferences, all in different weeks; in different schools. On top of that, I volunteered to cook a dish for two of the conferences, so add that to the long list of to do things. But, I was running high on adrenaline and massive cups of coffees and I managed to get through three hectic weeks; tomorrow starts the next three. I will tell you all now, that I may be absent from here for a few weeks again. The thing is, I enjoy it. I like running around like a chicken with my head chopped off. I don't know if my children care for it as much, because as far as they're concerned, the more I am not at home, the more I am not there to serve them! That is what daughter number two said, in not so many words. Yes, mum the cook, chauffeur, maid and teacher is ... continue reading...

Fall In The Rockies

Fall In The Rockies

Sometimes, pictures say more than any words can, so here is what I experienced at Rocky Mountain National Park last Sunday: I give thanks everyday for being able to live in one of the most beautiful places in the world. I hope you are all having a great week. It's been busy here and hence, my absence from my site. I promise to post a recipe soon and an update on all the exciting things happening in Broomfield (there really isn't that much but I want you all to come back!) Thank you for reading and have a great week. ... continue reading...

The Search For Perfection

The Search For Perfection

Why is it that when I have a craving, be it for a creamy, sinful pastry or a simple croissant, it is never satisfied? Am I the only one that this happens to or are my expectations set so high, I am invariably disappointed? As much as I enjoy cooking and entertaining, there are times that I like to venture out and try new places. I don't always want to cook or bake, even though that is exactly what I should do. Things like French pastries or croissants, or a well made quiche and cheese and tomato toasties, these are what I crave for breakfast or after supper. I am constantly searching for a French patisserie or a little cafe serving European breakfast delights. I have yet to find one that satisfies my picky taste buds. Does this happen to anyone else? I can envision what I want: a perfectly baked, beautifully layered Danish pastry with the right amount of sweetness and fruity jam, and the reality of what I get: an over baked, dry pastry, with sickly, sweet, gloppy jam. I want a crispy on the outside and soft, buttery and generously slathered with almond paste on the inside, almond croissant and what do I get: a plain croissant with no layers and almond paste that needs a ... continue reading...

Savoury Vermicelli Noodles~Kharay Seviyan

Savoury Vermicelli Noodles~Kharay Seviyan

Last week at a "Parent-Principal Coffee" at Sahare's middle school, in a surge of misplaced over enthusiasm, I signed up to represent Broomfield Heights Middle School at a District Parent Council. Sounds impressive doesn't it? Yep. Don't know what I was thinking. Actually, I don't know what I was doing at a "Parent-Principal Coffee" in the first place! We have been in Colorado for a year now and last year, we were new to the school district and I was busy so I lay low. This year, I have decided to play a more active role in my children's education; very noble and self sacrificing, I know. It's not easy though. I find that I have such little time  to accomplish things at home without adding volunteering at the children's school or the mosque. I don't know how working ladies do it. I am impressed at those women who have full time jobs and a family and still they manage to cart their children around to extra curricular activities and run their errands. PHEW, I am tired just writing that sentence. I understand why people don't attend PTA meetings or volunteer at school events. It's not easy. For me, it's not easy because of my physical limitations and also, my medications affect my ... continue reading...
