The past few weeks have been quite tough on the weather front. We were slammed with three consecutive storms that dumped a minimum of 2 feet (60 cm) of snow on us. Temperatures hovering near the 0F mark and 100% humidity just about brought me to a standstill. I can handle snow and cold, and though my bones hurt a little, I'm ok with the dry, cold weather. This snow was wet, heavy and wet. It weighed down the trees and bushes, the branches creaking under the weight of almost 6 inches of slushy snow. The power lines were having a hard time too, and the wind, oh my goodness, the wind chill was quite bone numbing. I pretty much stopped functioning.  This weekend, however, pushed those snowstorms into the distant memory and we had a beautiful Saturday and Sunday. If it wasn't for the massive pile of snow in my front yard, you'd never know we even had such cold weather. It's going to be gorgeous all week long, beautiful spring weather.  We took the opportunity of a sunshiny Sunday and headed up to Rocky Mountain National Park for a few hours. Spinach Fatayer with Feta

London makes quite a few appearances in this blog purely because that's where I grew up and have, not only my fondest memories, but the most vivid ones. I moved to London at a young age but since I was old enough to be aware and spent my school years there, I have wonderful memories.  I don't talk too much about my time in Saudi and only because I have flashes of my time there. I was born in Saudi and though I only lived there for a short time, my memories are happy ones. I have no Middle Eastern ancestry, but happened to be born there because my parents moved a few years beforehand for work.   Mostly it was hot, and I believe it still is! But for all the heat, I still played outside in front yard of our house with my sister, enjoyed picnics in the date groves and BBQ's at the beach. It maybe a sandbox, but it has its own beauty.   To accommodate our big family back then (there were 8 of us) my dad ordered a huge 1976 Cadillac Deville straight from the factory in Detroit. I remember the day it arrived, beautiful, silver with red leather and big, boy was it big. It still had the temporary Michigan plates and as a youngster, I was just gob smacked.   Hello friends! It has been a bit of a lazy and blah few days on the blog front. I'm not sure if it's the weather; the snow and cold making anything related to thinking and writing quite difficult. I love winter though, so I'm usually at my happiest at this time, but I rather just stare out the window for hours on end at the snow falling rather than be attached to a computer or straddled to the stove. The reality is that I've been crazy busy and when free time rears its head, I am so tired that I cannot think, let alone compose a sentence or photograph. This does lead to hours of blank staring out the window or mind numbing marathon of shows recorded on my DVR. I have been preferring my dusty, paperback, even though I sneeze and cough every time I pick up the book to read, over the cold smoothness and blinding brightness of my iPad. I realised I had gone 48 hours without opening my iPad when it told me to sign in again! I apologise to my friends for not stopping by to read your posts. It's just been one of those weeks.   This post has been languishing in the darkness of my mind for the last few days. A busy, working Saturday and an errand filled Sunday kept pushing the post further and further into the recesses. I really should plan better or schedule better, but I don't seem to learn that lesson. I don't hold a 9-5 regular job that takes me out of the house and so, my jobs come spur of the moment and suddenly I am busy. It makes having a social life non existent.  Another 2 days went by in a blur and here we are. But today, my heart is heavy. My heart has been heavy quite a bit lately.  I'm having such a hard time dealing with the amount of hate that is permeating our society. It's nothing to do with religion or race, because theoretically, all religions are peaceful and people from different races are tolerant. But it is horrible, hateful people without a conscience who commit these heinous crimes, the sad thing is they use their religion/race as a springboard. These people use their religion or lack of, or an idea of their superiority, or more obviously, their ignorance, to push their ugly ideas and their hatred to attract attention. Not only is today's post the 250th post on my site, but it's also this little blog's 4th anniversary! Thinking back on it, there really should be a lot more posts, but I was pretty laid back about them back in the day. I'm just totally surprised that I even made it to 4 years! As much as I love writing this blog, developing the recipes and taking the photos, it is a lot of work and so hard to keep up. I think everyday for the last 4 years, I've asked what state of mind was I in that I agreed to do this! And everyday for the last 4 years I've thought about giving it all up. Then, of course, that day I will make something that turns out phenomenal and my first thought is, "I need to share this!" So, there you have it. I can't stop even if I want to. And I won't. I have plans for my little piece of web and slowly but surely, we are getting there. None of this would be possible without the support of all of you, my readers and friends. I am thankful for the friendships I've made, the wonderful blogging community, and the home cooks who actually try my recipes! I appreciate every one of you. Thank you for a wonderful 4 years.
