Pickled Beets Slaw

I find it highly amusing that having written about our balmy, autumn days in the last post, the temperatures have made a 40 degree drop. As I sit here on this brusque and frosty Sunday morning, sipping a cortado at my favourite coffee shop, the snow is falling; meandering and slicing through the icy air and disappearing as it hits the ground. It is early still and the snow flakes, though falling with a vengeance, are still too wet to accumulate. As the day goes on, accumulate it will, and then the desire for a crackling fire and thick, hearty food will set in. I am already dreaming. My husband has stated that he wants a stew like dinner with some chunky bread. I think a luscious and creamy chicken stew is on the menu for today. It may be quite monochromatic in many areas of the world right now; all the autumn and summer colours have vanished for the season. The twinkling and rainbow lights of the holiday season are what brighten up the neighbourhoods these days. They have their own festive beauty and I find them a welcome sight in the dreariness of winter. Roasted Cauliflower with Brown Butter

The visible signs of the Colorado winter are gradually etching the landscape. The leaves with their red and gold hues are all but gone; not even to be found delicately, crunching underfoot. The pleasantly sunny and temperate days, and the cool evenings of late paint a perfect fall picture. The Colorado fields; resting, rejuvenating and replenishing for the next season, relate a winter story, however. The other day, while on my way to lunch with Ansh (from Spiceroots), I was stopped at a traffic light. As my thoughts meandered west, my eyes fell on a tree growing by the foot path. It stood tall and bare, symmetrical in its shape and the spread of its branches, and unashamedly proud of its naked glory. Through its graceful, bare branches I espied the Rockies, grand, majestic and beautifully snow capped, towering over Colorado. The signs of winter are here, but autumn doesn't want to relinquish hold. That's fine by me, running errands in a sweater and jeans, instead of snow boots and woolly hats, is all right with me. Sweet Potato Tea Bread

It has been quite magical not having to hustle and bustle around because of some impending deadline. I am finally allowing myself to fall asleep on the sofa without a care or a worry of having to get up and finish something. Last night, I fell asleep half way through Monday Night Football and because it wasn't the Broncos, I continued to sleep. I only got up on my husband's insistence that I couldn't sleep out there all night and stumbled upstairs to my own bed. The fog seems to have lifted from the dark recesses of my mind as well. The glowing embers of what were once my creativity and inspiration have been fanned into life and the flame is beginning to burn bright once again. I will capitalise on this rejuvenated spirit lest it flicker and die away. The last few months have taken my energy, there is no doubt, but it only takes a few days of a clear and rested mind to be fully recharged again. I love my job and I love the flexibility and the freedom I have to create at will. Today, I'm actually guest posting over at Go Bake Yourself! Uru needed some help while she finished off her exams and I was more than happy to help her out with a post. I'm sure you all know lovely Uru; she need no introduction. But just incase you've been living under a rock for the last few years, Uru is a recent university student who has been blogging about her sweet tooth for a few years now. I've known her as long as I've been writing. She lives in Australia and she just finished her first year in university, woo hoo! Uru has a few things in common with me; she is the same age as my eldest daughter, both are in university and both are vegetarians, oh and both have massive sweet teeth! Pear Stuffing and a Giveaway!

The holiday season officially starts next week with Thanksgiving kicking it off here in the US. Thanksgiving also happens to be, I think, the most anticipated and biggest holiday for food inspiration, new and traditional cooking and baking, and of course, let's not forget the eating. I did not grow up celebrating Thanksgiving, obviously, because England doesn't have that holiday. However, I believe that Thanksgiving is truly a foodie holiday. The whole day is centred around food, family and football, with a bit of thankfulness thrown in. I really took to Thanksgiving! Now, sometimes when I feel like holding back a bit, I can't. My children and my husband, are crazy about the food. It's the one holiday they really look forward to for the particular food that's served. Last year we did a potluck with our friends and a 40 pound turkey, 30 side dishes and 12 desserts. We were very thankful and incredibly full. This year it's the same group but I hope the turkey is smaller! So, onto this recipe. As you know, I rarely do any kind of sponsored posts on my blogs.
