The thud of the massive front door, the sound of muffled voices and shuffling of a few dozen feet almost always indicated something exciting was happening outside our flat door. Our group of flats was always fairly quiet. We were the only children in the group of ten apartments and after my father had successfully got rid of the surly lady who lived in the flat below us, by effectively offering her a very attractive price for her home, my little brothers could run rampant down our hallway without a batty old lady beating her broomstick on the ceiling. So, when the sounds of life could be heard quite prominently, and the dings of the lift going up and down, and vibrant conversations in a foreign language, I would peek through the peep hole. My favourite discovery was always the arrival of our upstairs neighbors from Kuwait every summer. Why did a teen get excited about neighbours from Kuwait? Well, because neighbours from Kuwait meant great Gulf food was sent down to us regularly and that was worth getting excited about! I knew good food at a very early age. The family who lived upstairs from us, resided in Kuwait during most of the year, but when the temperatures soared in Kuwait, ... continue reading...
Potato Samosas
Well, todays post started off with a total heart attack when I logged onto my site only to find it was gone! I saw the photo of that annoying smiling lady when I typed in my page, to no avail. I frantically started a chat with Hostgator support and tweeted to @HGSupport "where is my site??" All kind of horror scenarios came to mind and I was immediately transported to poor Charlie's at Hotly Spiced lost website nightmare. I couldn't believe that just last week I was raving in a comment on Charles' blog, Five Euro Food how great Hostgator is! And here I was yesterday, frantically waiting the 15 minutes to get a live chat person. Come to find out, thanks to @HGSupport, my domain name expired. Great, I got no email, no warning, no nothing, just a page with that annoying blonde lady smiling. How could I have forgotten to renew my domain name??? Last year, I moved hosting companies and also transferred my domain name to Hostgator. They apparently, didn't add it to my billing account and so they didn't inform me of the upcoming renewal. Well, I got on it quickly enough just incase there was someone waiting to steal my name :) Thankfully, nobody wanted it that badly. Within a few hours ... continue reading...
Shami Kebab
We're on day 8 of Ramadan and slowly but surely, I've been cooking through my family's favourite foods list. I am not going crazy, because that would defeat purpose of this month, but since my children fast I like to make something special for them. On days that I make something elaborate for Iftar (the small meal we break our fast with), I make a simple dinner, like a hearty soup with some fresh bakery bread (we have some amazing organic bakeries in Denver). On days that we break our fast with just some dates and fruit, I make a bigger dinner. Last night we had one of my husband's favourite dinners, chicken enchiladas. Our Iftar was mangoes, sweet figs and grapes with a few leftover samosas (recipe coming up soon). These Shami Kebabs are found in many countries. They are popular in Iran and chances are that's how they made their way to India. Indian cuisine has a lot of Persian influence and these kebabs made of ground meat and lentils are popular in India and Iran. Pakistan and Bangladesh also have similar kebabs in their cuisine also. I ate these often growing up and they are some of my favourite kebabs. They are very versatile and can be eaten at breakfast with some hot ... continue reading...
Ataif with Walnuts and Coconut
I must begin today's post with some apologies to my blogosphere friends. I am woefully behind reading and commenting on your blogs. This Ramadan schedule of late nights, early mornings, midday naps interspersed with phone calls of holiday greetings, reflections and prayer and trying to update a blog so that others looking for Ramadan recipes are not left in the lurch, I am not able to keep up with reading all your wonderful entries. Please forgive me, I haven't forgotten you, I just need some time. Apart from the tiredness, the fasts are going well. They are very long, there is no denying that, and it is very hot here in Denver but I have been turning on the air conditioning and staying indoors. Come mid afternoon, I head to the coolest part of the house, which is the sunken family room, plop myself on the sofa and enjoy the cool air from the ac as it floats around me (our ac vents are in the floor). If I am lucky and get my mind to calm down from the million and one things I need to do, I can grab forty winks. In most Islamic centres around the US and I know in the UK, we have dinners every night that are sponsored by the congregants. One family or maybe two families will ... continue reading...
Sriracha Sauce with Garlic Scapes
"O you who believe, fasting is prescribed to you as it was prescribed to those before you, that you may (learn) self restraint" Qur'an 02:183 Ramadan Kareem! Ramadan starts tomorrow pretty much all over the world. There is always a bit of confusion to the start date because if you follow the example and tradition of the Prophet, we have to view the sliver of the new moon to declare the new month. Others, are content to follow the scientific date of the new moon. Most of the time, ok not really, but sometimes, we all agree and start on the same date. I love the lunar calendar!! There is always that bit of uncertainty and mystery to the start of Ramadan which has now become tradition in itself. Before I get on with todays post, there were a couple of questions I wanted to answer from the comments last week, which I should've mentioned in the post I guess. John from the wonderful blog Kitchen Riffs mentioned about living in Morocco and how the natives there broke their fast. I wanted to say that, in last week's post I mentioned only South Asian traditions and food. In most of the Middle Eastern, North African and Mediterranean countries, the fast is usually broken with soup and in ... continue reading...
