It has been such a hectic week that I didn't even have a chance to write about the Islamic holiday that we celebrated on the 26th. This is the second of the our two major celebrations and it is the celebration of the pilgrimage to Mecca for many Muslims and also, the remembrance of the sacrifice that Prophet Abraham was asked to make of his son. Muslims around the world who can afford the trip to Mecca are encouraged to do so and on the last day of the pilgrimage, they sacrifice a lamb or goat. Muslims who could not make the pilgrimage are also encouraged to sacrifice a lamb or goat in remembrance of Prophet Abraham. The meat that comes from the sacrificed animal has to be shared with friends, family and the needy. Many Muslims, including my family, just give money to have a lamb sacrificed on our behalf, and the meat distributed to the needy in Africa, or India, or any country that is in need. We celebrated by going to a prayer service at our local Islamic Centre and having some friends over for dinner later that evening. When my husband and I met, his dinner repertoire consisted of pot roast, chilli, sausage with Spanish Style Rice a Roni and stuff between two sandwiches. Oh, and a recipe for a family sweet potato casserole. The first meal he ever made for me was his pot roast. Every now and then, when I don't want to cook, I buy a roast and make him cook. Now, the thing with his recipes is, I have changed every one of them, including the traditional family recipe for the sweet potato casserole. However, he likes all my changes and claims that since I make them better now, I should just cook them! Yeah, shot myself in the foot with that one. A few months back I came to the startling conclusion that my husband is one of the "masses." Let me explain: one evening we were both craving pie so against my better judgement, I let him pick up a couple of pies from a local chain of restaurant bakeries who apparently "excel" in pies. We ordered a strawberry rhubarb and a coconut cream. They were, by far, the worst pies I have ever tasted. How can you screw up a simple pie like strawberry rhubarb? Oh, but they managed.   Lately, I have been making a concerted effort to eat more fish. As you know, I am a bit reluctant when it comes to seafood. It's probably in part, due to the mediocre fish we have here. Of course, landlocked Colorado doesn't see much seafood to begin with, but even when I was in Houston, close to the Gulf of Mexico, I didn't care for the fish there. They enjoy eating catfish and I have to say, catfish tastes like mud. It's quite disgusting. I do miss the excellent fish and chips of Great Britain and even though many try to replicate the ubiquitous dish here, they don't quite get it right. Trace and the children, however don't mind fish and I started thinking that I was being quite unfair. So I have literally pencilled in a day every week to make fish. This way I have time to research a recipe and have an idea of what do with said fish. Since fish is a quick preparation dinner, I planned it for Monday night when my husband is at home and when we enjoy watching Monday Night Football together. When he's home, I hate spending hours in the kitchen and this was a fairly quick supper. I had planned on cod but the shop had these awesome, incredibly fresh Dover sole fillets. I happen to be a big fan of the BBC Good Food magazine and their website. It's a wonderful resource for me because living in the US, I don't get much information on British food and despite the UK being on the butt end of foodie jokes, I think the British have great cuisine; it's all seasonal and regional and I don't think just one dish defines British food. Unfortunately for me, I cannot subscribe to British food magazines. However, lucky for me, there is technology. Now I can subscribe to these magazines from my iPad and they are wirelessly delivered. I love technology. I do miss the feel of a paper magazine but I will take an electronic version if it means I can keep up with the seasonal food scene back home. The e-versions are amazing though. They have beautiful HD pictures, all these cool and nifty ways to save recipes, share them, little windows that pop up with useful information. I love it. I am bookmarking like crazy (they have a cool way to bookmark too.) There are so many things I want to try, things I grew up with but have forgotten. So, I am truly inspired now. World Arthritis Day~October 12, 2012

Today, October 12th is World Arthritis Day, an awareness day for one of the most debilitating illnesses out there. This is not so much a food post but a post about something very close to my heart ( and every other organ and muscle in my body!) When we think of arthritis we immediately assume it to mean old age, but there are so many; young, middle aged and old who suffer from the effects of arthritis. Awareness of inflammatory arthritis and autoimmune conditions is important to me because I live with Rheumatoid Arthritis. RA is an autoimmune, chronic illness that is slowly wearing down my joints because of inflammation. I find many still don't know about RA and sometimes it's hard for them to understand why I cannot commit to certain events or programs. They take my reluctance to participate as indifference or laziness even. Believe me, if you knew me before my RA, you would never have thought me lazy. I couldn't sit still for a moment. Now, it is torture for me to sit and watch when I want so much to do.
