The weather has turned beautifully cool and fall like here in Colorado. Yesterday, after a rainy spell, it got downright cold. Perfect weather for turning on the oven and baking up a sweet treat. There is something so comforting to have your house nice and toasty when it is a bit chilly outside and redolent of warm fall spices. I think I am jumpstarting the holiday season! ( Of course, compared to the shops, it seems like I am way behind! They have Christmas decorations on sale already!!) I am so ready for fall and all its heavenly colours. The mountains are beginning to change into glorious reds and golds heralding the season. The days are milder and the nights; a very comfortable cool. The neighbourhood gardens are filled with jewel laden trees and sunny pumpkin globes. All this beauty around me is truly inspirational to my cooking! My apple tree in the garden is over flowing with small crab apples; little red and green baubles dotted around like ornaments on a festive tree. Chicken Cutlets with Cauliflower-Potato Puree
I have been easing myself back into cooking and let me tell you, it hasn't been easy! You would think that since I like to cook and like to consume, and then I write about what I cook and consume, I would have no trouble, wrong! It has been very hard for me to get motivated and excited about cooking again. I am still very tired and maybe that's the problem. I have been taking ridiculous amounts of vitamins and eating healthy (I only started yesterday and there wasn't much cooking done) in a futile attempt to get my energy back. We'll see how that goes. Today I sucked it up and made a plan to nonchalantly stroll into the kitchen and survey the stock. I didn't want to risk causing any unwanted attention incase the natives got excited about dinner and then I would have no choice. Unfortunately, my excuse of a lack of groceries was no longer valid since I had done a huge shop the day before (in my attempt to eat healthy and gain energy.) It's such a vicious cycle, isn't it? You don't have the energy to cook but you have to cook and eat something relatively good for you (versus grabbing a takeout) to get some energy, but you're too tired to cook and so on. Ramadan Thumbprint Jam Cookies and Back to Routine
It has been a crazy, tiring month! However, despite the sleep deprived nights, long, thirsty days and food coma evenings, it was a great Ramadan and I enjoyed every single day and night. It was a very busy month and the long days made fasting a little difficult, but more than the lack of the food, it was the lack of sleep that hurt the most. By the time we got back from the Islamic centre at night, it was almost 11.30 and then to turn around and wake up for our pre-dawn breakfast at 3 am, it was incredibly difficult. My children had their routine figured out, they didn't sleep until after dawn and then slept all day until 5 pm; just in time to get dressed to head out to the Islamic centre to break our fast and evening prayer. I was quite busy since I signed up to cater many of the dinners served at the Islamic centre. Many people sponsor the dinner during the month of Ramadan because there is great reward in feeding a fasting person. All thirty days, there was dinner at the Centre. I was hired by about six families to cater their dinner and so that kept me quite busy. I also sponsored my own dinner and decided on beef stew, rice, rolls and peach cobbler for dessert. Ataif bil Ashta~Cream Stuffed Arabic Pancakes
Today I am reposting a post I did back in August last year at the start of the Islamic month of fasting, Ramadan. Ramadan starts today in many countries around the world and we are fasting (trying hard not to drool as we read food blogs). Ramadan is the ninth month of the Islamic calendar and one of the most important one for Muslims around the world. The Holy Qur'an was revealed during the month of Ramadan and all Muslims try to read all of it, at least once during the 30 days. This is the month where the Devil is chained up for 30 days and we are left in peace to worship and perform good deeds. It's the Islamic equivalent to Christmas as far as festivities go. We love having family and friends over and we enjoy going to the Islamic Centre and being with our community. It's a hustling, bustling time of the year for us. Aebleskiver~Danish Pancake Puffs
I am finally back to the keyboard after a long break it seems like. My whirlwind summer ended Saturday morning as the last of my summer guests headed out back to their home State. I collapsed into my bed and slept for hours and then got up and continued to lounge in bed. My grumbly tummy finally made it impossible for me to just lie there anymore and I had to get up, reluctantly. I have thoroughly enjoyed having my family and friends visit this summer. It was a lot of fun, albeit a little tiring, but I'll sleep it off I am sure and will be back to new. Two weeks ago my friend was here from Houston and we had a blast talking and eating the days away. We do a lot of eating when we're together which is amazing because we don't ever shut our mouths from all the yapping long enough to chew our food! Last week my sister from Columbus joined us with her husband and three children. Her youngest is a little boy who is 11 months old and he was the centre of attention. Adam is a so adorable and I will miss him terribly. He's at that wonderful, bubbly age of constant smiles and giggles. We had a great time talking, eating (again) and sight seeing.
