I wasn't going to post this recipe originally because it was just one of those left over meals made in a blur. I had made a stir fry the night before and had a bunch of brown rice left over, I decided to add some fresh vegetables and eggs and fry it up. As I was making it though, I realised how pretty it looked and decided to take some pictures. I know everyone knows how to make fried rice but I figured I'd post this anyway to entice people to fry up some rice, if they haven't done so in a while. Sometimes we all need a bit of a nudge in the inspiration department. I know I do. There are days where I get stuck in this rut and all that comes out of my kitchen are the same three or four dishes I know I can throw together quickly. I love to try out new dishes but it has been a while since inspiration has hit me. I believe, I get too comfortable knowing what my family's favourites are and then just stick to making those because it's easy. There's also that craving thing; you have to give into those cravings. BBQ Chicken Pizza
This week saw the return of my children and husband back to school and work, respectively, after a long Spring Break. Despite it's length, it was nice to have everyone home and relaxed. We didn't have to wake up early and rush to get breakfast or to make packed lunches. The mornings were a most civilised affair and that's probably because only my husband and I were up before 2 pm! I love having my husband home and feel a bit depressed when he starts back to work. However, as much as I love him and love having him home, he does disrupt my routine! So, I am glad to see everyone back to school and work just so I can have my sanity and house back. We did go for a mini vacation to South Dakota and Wyoming. It's only a six hour drive from here and we thought it would be nice to get away for a couple of days. It was nice. Very nice. South Dakota is beautiful and Mount Rushmore was quite impressive. The Black Hills were just gorgeous and the weather was great. I was really taken by the beauty of South Dakota with it's green rolling hills intermingled with endless plains. Anyone who is interested in a home based, bakery business in Colorado, knows that yesterday, Governor Hickenlooper signed the Cottage Food Law bill. What that means is that many bakers with a knack for churning out edible works of art can now sell straight from their home kitchens without breaking the law. There is, of course, a set of rules you have to follow and have your business registered, product labelling, disclaimers etc. This is great news for many who just want to make a cake or two for friends and family and get a bit of money for doing it. There are many who are not happy about this law, businesses and consumers alike. The businesses who have commercial kitchens or work out of a rented one, are obviously not keen about this law. Not having to work out of a commercial kitchen greatly reduces overhead and they want everyone to have this overhead. But they have to realise that not everyone wants to own a bakery or can afford to do so at the very beginning. Some just want to get paid for what they love to do without having to leave home or their family to do it. There are also some consumer concerns since the home kitchens are not officially inspected. Star Wars Cake Pops
I know everyone heard about Denver's "historic" snow storm last week on national news and, as someone living in Denver, let me tell you, it was all true. We still have snow EVERYWHERE. It started last Thursday evening, right after rush hour and it snowed all night, all day Friday (the children had a snow day,) all night Friday and into Saturday afternoon. At the end of it, we had almost two feet of snow in our garden alone with about three feet in certain areas where the wind blew. Yes, it was definitely a national event! We made it through though. It was nice to just relax and stay warm and watch the snow fall. It is a very calming activity; you get a cup of tea, pull back the curtains or blinds and just mellow out watching the flakes dance to the ground. Try not to concentrate on the fact that you will, eventually, have to go out and shovel out the snow from the side walk and drive way! As I mentioned in my last post, it was Laith's turn to be "Star Student" in his class. I Am a Baking Fool!
Lately, I have been thinking back on the days when I was a baking fool. I baked every thing under the sun and so, was able to master almost every kind of pastry and cake technique and recipe. Then I stopped. I don't know if it was my waistline crying out for mercy or my aggressive RA breaking down my joints. Whatever the case, I really cut back on experimenting in the kitchen, especially with baking. Sad thing is, I love baking and especially European specialities. My love for European confections originates from the fact that I grew up eating them in London. A good croissant is virtually impossible to find here let alone a creamy, moist éclair with just the right amount of Chantilly cream. My return to baking has been prompted by a couple of things: one, an unfortunate encounter with the worst éclair I've ever had and two, the number of these unfortunate encounters have prompted my husband and I, to seriously think about our own business. We knew we always wanted to do something, and that something would involve food. We are just on the planning and research part of it right now, because, honestly, it's not cheap.
