Split Green Pea Soup with Crispy Beef Shreds

What an exciting few days it has been, that is, if you call almost losing all your work on your website and burning out an oven amidst dinner, exciting. It was quite stressful as I know many of you will understand. The thought of losing all your hard work in the press of one button is simply horrifying. However, I have a very smart nephew on my side and don't know what I would do without him, especially in the matters of computers. So, thank you Azhar, for dealing with all the tech issues for me. I love you. As for the oven, that was another headache, which has now been resolved. I need to thank my husband for this one and for being in the business to fix it so quickly. On Christmas Day, we decided to catch a film. I knew that by the time we returned home, we'd all be starving and not many places are open (you know this when even McDonalds is closed.) I browned a roast, threw in some onions, celery and garlic, poured over some stock and left it in a slow oven to cook till we got back. When we got home, the house smelled divine, all warm and cosy and inviting with the aroma of a luscious pot roast. Grilled Macaroni and Cheese Sandwiches

I know what y'all are thinking...sandwiches? Really? But these aren't just any ordinary sandwiches, these are creamy, delicious, macaroni and cheese sandwiches. I know they are easy to find on the internet and you probably don't need me to tell you how to make them, but would you really have thought about them if I didn't mention them today? I think not. So, here they are and they go perfect with my Split Green Pea Soup with Crispy Beef Shreds. My children and the grown ups in the house, all find these irresistible. I love macaroni and cheese and can eat a whole box by myself. I think this comes from my childhood trips to Lindy's after a long evening of shopping at Brent Cross where we would then indulge in some absolutely delicious, hot and creamy mac and cheese and cauliflower and cheese (another favourite.) These days  I don't even bother making mac and cheese from scratch, I almost prefer the easy boxed versions! I like to get the Annies brand organic shells and cheese. Scenes Of Winter

The children are out of school for Winter Break and so I am seeking refuge in my bedroom. It's very difficult when they are home! I like not having to get up early and make a dozen packed lunches, (of course I am exaggerating, it's only three packed lunches, but at the crack of dawn, having to slather even three sandwiches with mayo or peanut butter, just seems too overwhelming) but when they are home, my peace and quiet are gone. I know, I know, I must sound like a terrible mother. I don't like Winter Break so much. My husband works longer hours at this time and we can never go anywhere so if you have children, you will understand the constant whining I have to endure and it's very hard to keep all four of them entertained. Wish me luck; this is only day one. Yesterday, it was snowing and my husband thought it a great idea to take a drive up to Rocky Mountain National Park. It's not far from our house and as you know from my past posts, we are always up there. I decided to take this opportunity to show you some pictures from the winter season. The last four days we have been under Arctic freeze conditions here in Colorado. I love it. After all this is why my husband and I jumped on the idea of moving from Houston. Most of y'all are thinking that I'm out of my mind enjoying frigid temperatures like what we've been having. As I write, it's 7 degrees Fahrenheit outside and that's an improvement on the 3 degrees just a couple of hours ago! I grew up in the wet and the cold of London. It feels like home when it's cold and it IS winter time. The snow falls haven't been the ones I like; the graceful large flakes that dance merrily down to the ground. We've had serious, small flakes that are here for business purposes only; the business of making driving and getting about impossible. Still; large or small, heavy or light, I enjoy watching the snow fall. I love waking up to find my world under a white, fluffy blanket. This is our third snow storm already and we're only in early December! Our first huge storm was back in October. Apparently, we've already exceeded the snow values from last year! As much as I love the winter months with their brisk mornings, chilly nights and snowy beauty, the early evenings really do a number on my photographs. I have barely seconds before finishing a dish, setting it up and then quickly trying to capture a few photos and then my light disappears. *SIGH*. So, if my food begins to look dull and grey, it's the lack of natural light and not necessarily my food! I thought I'd better clear that up because I took the pictures of this coriander meat dish very close to sun down. They didn't turn out too bad but I took many photos and only like five were worth using. We've had a fun and busy weekend as many Eid al Adha festivities took place. My father is also in town from Houston and it's been lovely having him pottering about at home. He's very low maintenance and will get his own breakfast and tea which really helps me out if I want to sleep in a bit or if I get engrossed in something. Yesterday, was my wedding anniversary. Trace brought me beautiful pink/red roses (Rainforest Alliance certified, of course), took me to a delicious dinner at The Kitchen in Boulder and then we went to see a film.
