When my family was visiting a couple of weeks ago, I made Indian food once only; the night they arrived. The rest of the week I was fulfilling requests for certain dishes I had received. The first night consisted of totally Hyderabadi dishes: Hyderabadi biryani, shami kebabs (my brother, Ali's, favourite), baghare baigan (another of Ali's favourites), raita and salad.The breakfasts were varied: one day I treated them with a Southern breakfast consisting of biscuits, sausage and cream gravy. They really enjoyed that one. There was also the egg and potato burritos with smoked sausage breakfast. So, basically, there were no Indian breakfasts on the menu and no Indian picnics either.Now, I tend to go into withdrawal if I don't have Indian (home or soul food for me) food once a week at least. Therefore, the two weeks of not eating Indian food was just causing havoc with my cravings. I needed something with spice and rice!I had a couple of bone in chicken breasts knocking about in my freezer so I decided to make my easy, everyday korma with rice. Spring Lettuce Salad

Here is another foolproof recipe that begs for your improvisation. I am including it here just so that, once again, if I write it, maybe you will think to make it. Sometimes we all need just a little nudge to get our imagination going, especially where dinner is concerned. I always like to incorporate fruit in my salads, especially with young, soft baby lettuces. A spring mix is perfect for pairing with fruit. The season is here for young, tender baby lettuce leaves and the markets are overflowing with baskets of these lettuce mix. I grabbed a big bagful last time I was at the market and have been using it everyday for lunch salads and dinner salads.Salads don't have any rules or regulations and yet, I have so many people tell me when they eat one of mine, that they would never have thought of adding such and such. I add whatever goes well together that's pottering around in my fridge that day.A good dressing makes all the difference too. For a soft salad with fruit, I like to use a sweet, Dijon mustard dressing. It has a hint of sweetness from the agave syrup (you can use honey), a crisp tartness from the fresh lemon juice and it's light yet creamy from the Dijon mustard.So, ... continue reading...

Exotic Mushroom Sauté

It seems a bit silly to actually post a recipe as simple as this, but I believe that this simple preparation, showcasing the mushroom, is absolutely divine. I feel if I write about it, you will feel inclined to give it a try next time you are face to face with these delectable beauties.This last time I got mushrooms, I got a mixture of about four different varieties. There is one mushroom that I was unfamiliar with until just recently, known as the lion's mane. This mushroom looks like a small brain or a cauliflower but it has an incredible fragrance, very floral.I got a pound/ half kilo of lion's mane, shitake, oyster and king oyster mushrooms. All their different shapes, sizes and hues makes them look like they are from some distant planet.If you happen to live in Colorado or if you just want to read more about these exotic gems, visit Hazel Dell Mushrooms at the Boulder Farmer's Market or online.Now, onto the cooking part. Farmer’s Market Finds

It was my full intention to do a recipe from all the food I made over my vacation but I have to say, I got a bit side tracked when I went to the farmer's market yesterday. I was surrounded by bright fuchsias and verdant greens, rosy reds and creamy whites. From the fabulously, fragrant flowers to the colourful radishes and beets, the market was a veritable cornucopia of sights and smells. The food stalls had their own aroma wafting through the air, enticing people to try their wares. We fought it as long as we could but in the end, we did succumb to the inviting aroma of the wood burning, brick oven pizza from Laudisio. Oh, it was good. Perfect, crispy crust, slightly charred, with just the right amount of sauce and melting, gooey cheese, topped with fresh basil.I always imagined myself shopping at an open air market. I think I got this romantic notion from watching too many films where they show markets in France or Italy, bustling with life. Family Musings

Summer 2011

Wow, I just checked my last post...it was almost 3 weeks ago! I am somewhat back. Still a bit tired from my excursions to every mountain in the Rockies! It's funny, two months ago I was excitedly awaiting the arrival of June when I would see my nephews and brother. Now, that week has come and gone, just like that *sigh*. We had a great time and it was so nice to see the boys or rather men, and to meet our newest addition to the family, my nephew's wife.We had breakfasts and picnic lunches and still came home for dinner. Exhausting but so much fun. There was constant laughter and giggling, and jokes galore. My children had a great time too. They have missed their uncle a lot and so they were ecstatic to have him for a whole week. Laith really enjoys the company of guys (makes a change from his bossy sisters) and so he really had a good time with his cousins. The Saturday they all left, my husband insisted we go to a movie because he didn't want me moping around the house. I was hesitant at first because I felt like moping; I missed them and I wanted to sulk, but I realised it wasn't any fun for him, so I agreed. My house is still too quiet and I feel a bit ... continue reading...
