Here is the moussaka recipe as promised. I didn't get a chance to send it out last night. Trace and I got involved in a Stargate:Universe marathon on our DVR. The show is ending (series finale tonight) just when it is finally getting good! Isn't that always the case? So, yes, I got side tracked with preparing dinner and the show and everything else that goes on in a hectic household.I can't even tell you where my moussaka recipe comes from or where I even tried moussaka for the first time. I have been thinking on this and the only thing I can think of is, of all places, Gulf Air! We would often fly Gulf Air from London to Karachi and they had the BEST food. I loved Gulf Air. The flight was a very long flight and boring. You were surrounded by dozens of smelly strangers all with questionable hygiene practices. The only thing that made the trip bearable was the thought of seeing my nephews and the wonderful food Gulf Air provided. Thirty minutes after take off, they would start with a snack and then every couple of hours or so, they would come around with something! My Week
Wow! I can't believe it's Friday already and I haven't posted anything new for a week! Sorry. It's just this time of year I guess. The kids are on the last leg of school and there is something going on every week for one of them. I have four kids and I get stretched pretty thin! Laith had a little musical program at his school and it was so much fun to watch him and his little buddies. They are so cute and enthusiastic and innocent. To be that young again!I hope you all had a wonderful Mother's Day on Sunday. I had a fantastic time. Trace and the children made me breakfast and each had a gift they had picked out for me. There was also a collection of body lotions and shower gel from Bath and Body Works that didn't get photographed but I will tell you that I smell just like Twilight Woods!It was very nice indeed. We then headed for the mountains since it was an absolutely gorgeous day. We just drove on I-70 and ended up in Silverthorne and had lunch there. Potato and Pea Quiche
I am sorry for my absence the last few days. I have been a little under the weather all week. Nothing exciting was cooked unfortunately, and my children have had to survive on pizza, grilled cheese sandwiches and baked potatoes. My husband is a great help when I am sick and quite capable of whipping up dinner for them but as luck would have it, his schedule was terrible and he worked late. As I write this, I am still not quite mobile. The weather here has been its usual erratic self and the damp, cold days are responsible for my breakdown. I am really hoping to get moving today because I have so much to do the next few weeks. Pain or not, one thing I had to do was make breakfast for my daughter's teacher appreciation breakfast. I had already committed and volunteered to make a couple of breakfast quiches. I couldn't let them down just because I was feeling poorly. So, I sucked it up and made the quiches. I did help myself by taking a few short cuts I don't usually take but seeing as I could barely stand, I had to make it easier on myself. New York Style Cheesecake
Tuesday was my husband's birthday. I tried to make it a special day for him because he never really makes a fuss about anything and is so laid back. He takes such good care of me. I don't want to brag too much about my husband, but I think he deserves somewhat of a mention. My husband, Trace, brings me my cup of coffee in bed, every morning. He will even make my breakfasts on his day off. He helps me endlessly and especially when I am having a hard day with my Rheumatoid Arthritis. He has been my hands and my legs when mine haven't worked. He works ten hour days and still comes home to load the dishwasher or fold the laundry that's in the dryer. He loves his children and hurries home every night to be with us. He never complains and he's alright with everything...even a dinner without meat. He gets two days off from work and he spends them with us, whether we sit at home watching a movie or hike up a mountain, it's fun with him. He's a kid at heart and all you have to do is hear him laugh to realise that! MashAllah, he is a wonderful guy and may Allah always keep him happy and healthy. I waited with much excitement and anticipation on Thursday because the two new All Clad pans I had ordered were going to be delivered that day. You are probably thinking "What?! Who gets excited over PANS?!" I do. I don't get excited over Coach purses, diamond rings or Jimmy Choo's. For me it's pans and kitchen stuff (and cars, thanks to two car crazy brothers.) I enjoy baking and cooking, and having the best pans and equipment, make it all the more fun and enjoyable. When I talk about kitchen equipment, I always have to smile because my friend Tammi would always tease me about my toaster. She said that only I would think to own a $300 toaster. That may be true, but we Brits love our toast! I got tired of mediocre toasters that claimed to "toast." I love my Dualit toaster and after four years, it still produces magnificently golden, crisp, toast. All Clad was having a sale so I couldn't resist. I used one of the pots yesterday to make some tapioca pudding for dessert. My pot performed beautifully. No burning and no sticking and easy clean up.
