I am sure many people are wondering why there are so few Indian recipes posted when I am supposedly Indian! It's not like I don't make Indian food, quite the contrary actually, I make a lot of Indian food. That is my comfort food and almost always my go to dinner. Maybe, that's why? Usually, I don't think about it, I just whip it up and we eat. I rarely use recipes or measure anything, and I think that's one of the reasons why I don't post as many Indian recipes; too lazy to pay attention to quantities! I am very thankful though, that my husband and kids are open to all sorts of different cuisines. This world is filled with so many different people and cultures; it seems such a waste not to discover them somehow. We probably cannot visit all these colourful places but one way is to try and experience their cuisine. There are so many different foods still to try and not enough days to try them all! Cream Scones
Breakfast is supposedly the most important meal of the day, then why is it that I find it the most difficult? For me, it's hard to find something to eat, something to make or even something to go out and enjoy in a restaurant. The weird thing is that I am a morning person. I get up early and potter around before the kids are up, even on the weekends. So, why is it that I hate thinking about breakfast? Breakfast is one meal that I really wish someone else would cook and I would just come down, like the mistress of the house and eat! You see, I am not a breakfast food kind of person. I don't like huge stacks of sickeningly, sweet pancakes with dubious looking fruit swimming around in some dangerous syrup or even an all out English fry up. I am not a fan of eating eggs everyday and even if I did, I wouldn't be able to decide how I would like them cooked! I was never a cereal person and even now, it's usually my last resort breakfast.When I was younger, I would get up before everyone else, especially on the weekends. Pappa al Pomodoro Soup
It has been a hectic week! The kids are on Spring Break, the hubby is off of work; there has been a flurry of activity at home. We had a friend visit from Houston on Monday night and he stayed till Tuesday and so we were busy getting ready for him and I was busy cooking dinner on Monday. I made a baked ziti and we had that along with my house salad and fresh, home made bread. For dessert: a steamed treacle pudding with lots of custard...yum. The next morning I whipped up a batch of my favourite yeasted Belgian waffles. So good; crispy on the outside and custardy soft inside. Everyone was content, alhamdulillah.Since Trace is also off this week, we have been doing yard work and he has been working on his "to do" list. We did take some time yesterday to go for a nice picnic up by Longs Peak. The weather was gorgeous, a bit nippy up in the mountains, but with deep blue skies and a beautiful view, we overlooked the chill. We drove through Boulder and stopped at Whole Foods to grab some of their bread and then headed west, with no destination in mind. Spring Time
I think spring is finally making an appearance. It has been beautiful here lately; sunny with temperatures reaching the 70's. There's still a bit of a nip in the air in the mornings and evenings, but the days are gorgeous. I have been enjoying running errands because I get to drive and look at the majestic Rockies; still covered in a blanket of white snow. When the day is sunny and the sky is the deepest blue, and there isn't a cloud in the sky, the mountains are absolutely breathtaking. One cannot help but look and thank God for their beauty. The trees in the backyard are beginning to show signs of life too. The aspen buds are blooming and revealing a little, furry flower. The red maple tree is unfurling its new leaves and amongst all the brown, dry, hard grass, I see little patches of green peeking through. A sure sign of spring was at the meat market the other day; I came across fresh English peas in their pretty, green pods. I was so excited to see fresh peas in pods that I quickly grabbed a bag and filled it. They were just so beautiful (and delicious too.) Cauliflower Pasta
When my number two daughter, Noor, was in sixth grade, she had a little gathering for her eleventh birthday. I asked her what she would like to serve at her party and she thought about it a while and came back with: lasagne, salad, garlic bread and tiramisu for dessert! My insistence that my kids have a sophisticated palette and be open to new tastes and foods, sure came back to bite me on my butt! She wanted tiramisu! What happened to pizza, cake and ice cream? I was happy that she wanted such grown up fare but I wasn't sure if her friends were ready for tiramisu. I agreed to make the lasagne but told her that we would go with chocolate cake for dessert. She agreed, but insisted that I had to make my honey vinaigrette dressing for the salad and not use some store bought one!As you can see, I was trying to take an easy way out where this party was concerned. I figured they were kids and pizza and ice cream was all the hard work I had to do (order pizza and buy ice cream!)
