Father's Day is this coming weekend and I thought it would be appropriate to post a recipe with some meat and grilling. Seasonal recipes chockfull of fresh vegetables are all nice and dandy, but sometimes you just need meat. I suppose it could've been even better if it was red meat, but we eat very little red meat at home. However, this particular recipe was made for my son's birthday bbq and we did have burgers and hotdogs too that day. His birthday party was a couple of weeks ago, and he invited his little friends to play in the nearby park and enjoy a bbq. It rained...the entire time. But kids don't care. They played in the rain, ate hot dogs, burgers and cake. This is the cake I made for his birthday. I may post the recipe/tutorial, but only if I get enough searches for "Spiderman Cake" :) The kids thoroughly enjoyed the cake and the food. I really enjoyed my two favourite things, these chicken kebabs and lemon rice. This should really be two separate posts but I wanted you to have the lemon rice recipe incase you make the chicken kebabs and want a side dish to go alongside. This lemon rice pairs perfectly with the chicken. It can be eaten at room temperature and ... continue reading...
Asparagus Pasta Primavera
Asparagus season is quickly coming to an end here in Colorado. I find that asparagus is one vegetable I insist on eating only in season. Other vegetables I often let slide and eat a few here and there. Corn and asparagus are two I refuse to buy off season, though from somewhere, we seem to have them available all year round! Until last month, I had never tried a truly, local grown asparagus. Let me tell you in one word, wow. In Texas, I shopped from a local farm but they didn't grow asparagus. I don't know if asparagus can be grown in Texas! This farm had Southern specialities like all kinds of fresh beans, fried pies and then your usual farm fare. So, as long as local, Colorado grown asparagus is available, I've been rushing to the farm every week piling up on the grassy goodness. I have never tasted asparagus this sweet and perfect. Store bought asparagus is absolutely no comparison. My most recent visit, I grabbed two bunches of perfectly, green, crisp asparagus spears. I had no idea what was planned for these beauties but I knew they would be the highlight of my dish. Pasta Primavera is one of my favourite springtime dishes. It's substantial enough for lunch ... continue reading...
Pickled Radish and Lemon Mascarpone Tartines
It seems like I have been absent for an eternity. I have missed this. I have missed my creativity, my time in the kitchen, my inspiration, my failures and successes, but I think most of all, I have missed my readers and friends. This was not a scheduled absence; far from it. I was aggressively forced into this by my body. It decided that slowly and surely, it would take away all my mobility and leave me frustrated, angry and resentful in bed...for two whole weeks. I am not going to dwell on it any longer. It has taken too much of my precious time and thought for the past few weeks. I rather just tell you that I am feeling better and no longer tethered to the confines of my bed. I am moving slow but moving, and in time, will be back to my zippy self. It's been hard to just sit (or in my case, lie) by the sidelines and watch as the arrival of spring heralds the opening of farmers markets and farm stands and the appearance of gorgeous local produce. The spring weather has also been enthralling, lighting up the Colorado skies with the most amazing thunder and lightning shows and spectacular arrays of clouds. The birds are overly chatty (waking me up every ... continue reading...
Tres Leches Cake
This year, I seemed to have dropped the ball on posting holiday recipes. I had it all planned too! Back in January, I took my nifty calendar and scribbled possible posts and recipe ideas, I pencilled in relevant holidays and even some obscure ones like St David's Day, who unlike St Patrick, doesn't get quite the same recognition. For those of you not familiar with him, he's the patron saint of Wales. However, I did remember Star Wars Day :) A day circled in very bold on all calendars at home. I wasn't planning on sharing this post until next week, but as Mother's Day is coming up this weekend and I still haven't picked up that darned ball, I decided to post this early. It's quite a fitting cake for Mother's Day even though it was made as a birthday cake for my husband a couple of weekends ago. You might also be thinking that it's a bit of a froufrou cake for a man, and believe me, what he really wanted was a replica of the Starship Enterprise as his cake. A request I would have fully entertained if it wasn't for the jam packed status of the weeks leading up to his birthday. Model cakes take a long time to make, ask anyone who has made one! I told him it's still on my list and ... continue reading...
Star Wars Tartlets for Star Wars Day
Happy Star Wars Day or May the 4th!! As you all already know, I'm a big nerd and lover of most Sci Fi! It doesn't help that I married an even bigger Sci Fi nerd and so, by genetics, all our kids are heartily into Sci Fi, especially Star Wars. I don't even know what it is about Star Wars that makes it the cult that it is. Honestly, when we go back and watch it (almost every week!) we find so many discrepancies, bad acting and just overall cheesiness! But still, we can't stop; they are great movies and probably more than anything, for my generation, it's a nostalgia thing. My children have followed in our footsteps, much to Daddy's excitement. We have Star Wars marathons, themed parties and on May the 4th, we enjoy something Star Wars-y. Last year it was Star Wars cookies, check them out if you haven't; they took me FOREVER to ice. The year before, I made Star Wars cake pops for Laith's school project (and let's not forget the recent Star Destroyer) This year I was bit limited in my imagination. For the past 18 months, I have stopped all food colouring and that's what you need sometimes to make themed desserts pop. There is natural food colouring available but it ... continue reading...
