Houston is a bustling, sprawling, noisy city, not to mention the incessant heat and humidity. The bugs are bigger, the hair is bigger and the trucks are bigger in Texas. The freeways are endless and lie intertwined like snakes in a pit. In between this mess of concrete and metal, buildings sprout out of the ground like glass flowers, sparkling in the fierce sunshine. However, on the south and southwest side of Houston, life is a little bit quieter and here you will find farm land scattered amongst new housing developments and small city centres. This is where we lived before we moved to Colorado. We were right in between farm land on one side and a big developing city on the other. It was quite ideal actually; you felt you were in the country side with all the amenities of the big city. If it wasn't for the bugs and the heat, I may have considered staying. Just ten minutes down the road, we had access to a farm. I was ecstatic to find that you could pick your own strawberries, something I hadn't done since I had left England. Berrymisu Cupcakes
I am back from my stressful excursion of moving houses. Let me tell you what a headache it is. I am so exhausted and now, throughly irritated because I can't seem to reduce the amount of boxes in my house. I swear, I go through one and two more take its place. Last night, I decided that I was going to take a break from wading through boxes and bubble wrap and write up a post. Maybe once the unpacking is all done, I will post a picture or two (I have some Instagrams if you scroll down) The most important things are taken care of: satellite TV and the internet. If you have those two going, there is peace in the house. Anyway, here is a recipe for a cupcake. For those of you who have been following me awhile will know instantly that I never post cupcake recipes because I think that this cupcake fad has taken over the true art and skill it takes to bake a beautiful cake. But, I am not a hater, I eat cupcakes when the need arises and bake them too when requested. Strawberry Rhubarb Pudding
Hi friends!! I am still busy moving in to the new place but I scheduled this post to keep you all company while I was gone :). Truthfully, it would be all of you keeping me company because when my phone chimes to notify me of a comment, I am so going to jump on it! I can guarantee that I am not in a good mood right about now, and really tired and probably frustrated because I don't know where to stuff the rest of my million pieces of kitchen utensils and gadgets. Did I mention my kitchen is small? Complaining aside, let me tell you about these delicious strawberry rhubarb puddings I made a few weeks ago to use up the last bit of my rhubarb curd. It is still very much rhubarb season and I try use as much as I can. One of my favourite British desserts are the various steamed puddings: jam, chocolate and treacle; my absolute favourite. I don't steam my puddings because they take a while on the stove and I always need the stove top for something else. I usually like to bake mine, and the texture is a little different between a steamed and a baked pudding, but hardly noticeable in my book. Soba Noodle Bowl
I should be knee high in newspaper, bubble wrap and packing tape but I am already so tired of it that I could cry. I thought I would sneak away for a few and type up a quick post. I really haven't been cooking or trying out anything new for the blog but I had a few back ups that I hadn't posted yet. The idea of moving and even attempting to cook is making me quite nervous. There's only so much fast food you can tolerate and sit down dinners cost an arm and a leg for 6 people. As usual, I am not organised enough to have thought ahead and made a few dishes and stuck them in the freezer. I guess I will be cooking sooner than I want to! This soba noodle bowl comes together in a flash and is a great contender for quick, easy, moving in meal. I made this cold soba noodle bowl a few weeks ago for lunch. The night before it had been pretty cold and I used the soba noodles to make a hot soup per my family's request. All the same ingredients but the noodles were served in a hot broth and the noodle sauce/dressing was drizzled into the hot broth as a flavouring. It worked great in both cold and hot form. Brown Butter, White Chocolate and Pecan Cookies
When we moved back to Colorado, almost 3 years ago now, it was a hurried, stressful move. My husband's work wanted him to relocate to Denver but wouldn't hurry up and give us any information whether the relocation was approved or not. So there I was frustrated and anxious about whether I was supposed to pack up a 5 bedroom house or not. Finally the word trickled down from the upper management and everything was a go, but they wanted him there the following week! I was in meltdown mode at that point. We had a week to find a place in Denver, rush back to Houston and pack up the house, find time to shock the family with the move, drive two cars up to Denver plus the moving truck. Thinking back on it now, I just don't know where I found the energy. I single handedly packed up my house because my husband was in Denver and only flew down for two days to load the truck and drive it up. We sold our house in Houston, a house where I had picked out everything and had my granite kitchen island, my fancy back splash and pendant lights, where I had rooms for everyone and everything; I packed it up in 5 days and left.
