I would like to start by thanking everyone for the well wishes, prayers and happy thoughts! It has been a hard few days but all your wonderful comments wishing me a quick recovery are so appreciated.  One advantage to my mobility setback was the chance to catch up on a lot of blog visiting and working through my DVR. I had quite a few shows to catch up on before the new season starts. My knee is much better, still a bit swollen but I can hobble along. In other news, I am sure you have all been hearing about the Colorado floods. It is incredibly sad to see some of my beloved mountain towns destroyed by the wrath of Mother Nature. The little towns of Lyons and Estes Park that we love to visit regularly, and walk their main streets and poke about in the stores, are under water. It is heart breaking to see the destruction. My most beloved Rocky Mountain National Park is closed to visitors right now. For us, the way to get to Rocky Mountain National park is through the towns of Lyons and Estes Park. The roads to and from these towns are washed away. Never would I have imagined that I would see hurricane type rain and flooding in landlocked Colorado. Finding random times to write blog posts is becoming a specialty of mine of late. Every bit of down time, like waiting for pasta water to boil, or rice to steam or shower water to heat up, my mind is formulating ideas and sentences. Whereas my husband would argue that there is plenty of time to do such things in his office (toilet), I draw the line there! As luck or rather the lack thereof, would have it, all my craziness has just bought my life to a trundling stop. It was inevitable, I've been running on fumes for a couple of weeks now and this weekend was the last straw, I guess. I write this post in bed with my knee, swollen to the size of a watermelon, propped up and with an ice pack. One thing about living with an auto immune condition, you only have so many energy rations per day. If you borrow from other days because you are trying to be some overachieving super hero, you will run out of your rations very quickly. When that happens, your body breaks down in the most horrible way. I am now at this point. There is nothing more frustrating for someone who is always on the go to be suddenly crippled. I write this sitting at my son's soccer practice. I figured I would utilise this time to do something productive because lately, I seem to have no time to devote to my site. I am very sad that my schedule has been, so brutally, upset. I enjoy my site and I enjoy the 'me' time I devote to it. It's the only 'me' time I get and I treasure it. I love planning the recipes I will share, I enjoy (sometimes) setting up the paraphernalia to photograph the end product and I enjoy writing. However, what I thoroughly enjoy is what my blogosphere friends have been up to and the comments they share. It never ceases to amaze me that some of my blog friends, friends I have never met, take the time to write such thoughtful comments and share such great insights. I know they read so many blogs but to take the time and personalise each comment; I admire that greatly. So, to think that I may miss out on my weekly conversation with them is saddening. Life is so busy that a comment from a friend is sometimes all the conversation I can have during the day or even the week. Wow. I can't even begin to tell you what kind of week I've had. Back to school is always a hectic time, but I didn't anticipate this kind of hectic-ness. It has been totally crazy. For the last week, it seems that I have driven to the ends of the earth and back, and then did it again.  When we moved houses this summer, I knew that I would now have to drop the kids to school since we were now a bit further down, but I didn't realise that's all I would be doing. It doesn't help that my college age child doesn't want to take the bus (her college is less than a mile down the same road we live on!!) but rather have me chauffeur her to classes and back, and guess what? She picked classes that are at random times during the day. Add to that, my son's soccer practices on Mondays and Wednesday for an hour and half each day, the college child's new job and my second daughter's vibrant social life, I think you can see my dilemma and fatigue. Needless to say, I've had no time to cook dinner let alone be inspired to create for the blog. Roasted Green Chilli, Corn and Black Bean Salsa

I spent 8 hours of my Saturday roasting like a chicken at my son's soccer tournament. It was a nice day but if you are rooted in one spot just watching a game, the sun will get ya! We are a mile closer to the sun and let me tell you, you can feel its burn. Some of the more organised and seasoned parents had all kinds of fancy schmancy sports umbrellas and such, but we were neither organised nor are we that seasoned (we're still fairly new to the kids soccer thing) We sought out the free shade that came from other people's umbrellas and some itty bitty trees. Unfortunately, after 8 hours of cheering our son's team, waiting in between games and boiling in our skins, we didn't have much to show for it. His team is a new team and these guys haven't played together except for 5 practice sessions and it showed in the results. In their defence, the poor guys were also running up and down a huge field in the blaring sunshine. The highlight of the event ended up being my husband scoring two free pizzeria pizzas to take home.
