Hatch Chile and Zucchini Tart

So, remember those tart shells I forgot to take with me to the store last week? Well, here they are today. As you can see, I managed to remember them this week and only barely! I'm ashamed to say that I had to write a note and place it in the fridge to remind me. I usually grab all my refrigerated ingredients as I'm walking out so I knew if I left a piece of paper that read "tarts" stuck to the heavy cream carton, I'd remember! It's a sad day when you have to stick Post Its, everywhere.  A couple of months ago, the nice folks at The Hatch Chile Store offered to send me some of their New Mexico roasted chiles. How could I say no? Here I am expecting a little box of a sample and what arrives is this huge styrofoam box with ice packs and 4 pounds of gorgeous frozen chiles. I haven't had any time to break into them until this past weekend. I defrosted a handful to make these tarts. These chiles were hot, which is why I decided to pair them with zucchini. Zucchini is pretty easy going, non obtrusive kind of vegetable. It sits there quietly and allows others to take centre stage which is exactly what I wanted. My dearest friends and readers, I have missed you. It seems like an eternity since I've been on my computer, on Wordpress, typing away. First of all, I'd like to thank all those wonderful friends who have left comments on my Facebook, have chatted with me and sent me emails. I so, so, appreciate your love and thoughtfulness. It has been a busy summer for me. I celebrated the end of Ramadan in Houston because I really needed to see my family and to feel the comfort, love and support only family and close friends can bring. It was a bit of a sad Ramadan for me and I really wanted to trade my tears for smiles again. If you know me, you'll know that I'm never without a smile on my face. My thought on this matter is that I just don't have time to be in a bad mood. It takes entirely too much energy to be grumpy. We had a wonderful mini vacation to Houston, San Antonio and Dallas-Fort Worth. It was exhilarating to be with family again and laugh too much, eat too much and sleep not enough! I came back energised and ready to get cooking, baking, photographing and blogging. At least that was the plan. Pray for Humanity

You guys are going to think I'm a big tease, especially when I say I'm back and then disappear for 10 days again. I think I should just officially tell y'all that I'm stepping back from the blog for a bit. At least through Ramadan and probably the summer. It's unfortunate because I look forward to all the fresh produce that summer brings and am excited to try out new things but I just don't see it happening right now. I am definitely overwhelmed with Ramadan and my catering events. These were not on my calendar and as much as I love doing them, they are quite time consuming and tiring. I literally have no energy to cook and photograph for the blog. However, more than my job and even Ramadan, it's what's going on in Palestine that has brought my life to a standstill. My heart is broken, my motivation is gone and my eyes are heavy with the tears that flow every night. The thought of making an iftar feast for Ramadan while other Muslims (and non Muslims, many Palestinians are Christian) are burying their children is just more than I can handle. Hello my lovelies!! Did anyone miss me? On second thought don't answer that. I have missed you guys and am sorry that I haven't been able to come by and read all your stories. Life has taken a crazy, hectic turn these days. I hope to raze through my inbox this week to catch up so please bear with me! Talking about emails and inboxes, for some reason, I've been having problems receiving my emails from blogs hosted on the Blogger platform. They were all ending up in the spam box and I'd have to go in and retrieve them. Well now, I don't even get the emails. All my subscriptions to Blogger hosted blogs are gone. Thankfully, I am getting notified through Facebook but all your emails are not getting to me. I will be by to resubscribe, but please leave me a comment! I am frazzled as is and can't remember everyone who is on Blogger. So, I've been busy in the kitchen but not my kitchen. I've been having a wonderfully, busy summer with the appliance company my husband works for and they've been keeping me quite occupied. How was everyone's weekend? In the US, Sunday was Father's Day and it was a beautiful day, a bit hot for my liking but nice nevertheless. What did you all do for the special fathers in your life?  We had a bit of a late and lazy start but eventually when everyone was ready, we headed out to one of the many State parks we have and walked/hiked around, well, I mainly hobbled but it was still really nice to get out in the open and enjoy nature. I have missed being outside. We took a ride up to Golden Gate Canyon State park, about 40 minutes from where we live in Broomfield. It's not very mountainous as such, but a beautiful canyon with a river carving through, lush green vales and hills and a few precarious rock formations. We drove through to the open space and it was just perfect. We could see the plains of Denver on one side and rocks and hills on the other, and we were standing in the middle surrounded by an endless prairie. It was beyond beautiful and peaceful. We didn't do anything fancy for dinner; came home and slapped some burgers on the grill, chips on the side and warm brownies for dessert.
