I hope everyone had a wonderful Christmas surrounded by loved ones and lots of delicious food. Did you get what you wanted? After we reach a certain age, Christmas presents must not have the same excitement? I don't know though, I'm just guessing. I love getting presents and I'm old! It's always exciting to me to open up the bag or unwrap the wrapping paper with baited breath, waiting to get the first glimpse of the goodies inside. We were up bright and early Christmas morning to start off our day with our own ongoing tradition, the first showing of whatever the hit movie is that year. This year, Star Wars VIII. As you know we are huge fans so waiting a week to watch the movie was torture. However, I've done an opening night movie for Star Wars back when they had their 20th Anniversary. The weirdos that turn up for the opening night; I wasn't about to put myself through that again. So, we waited, and it was totally worth the wait. LOVED the movie and cannot wait for the next one. In the rush to get up and get to the movie theatre and due to some bad procrastination the day before, I forgot to pull out the chicken from the freezer for dinner. Piquillo Pepper and Goat Cheese Rolls
I wanted to start off by thanking all those who commented on the last post with words of encouragement, support and love. It has been difficult lately as the atmosphere every where is one of uncertainty. Violence, hate and suspicion are running rampant and I have to say, it makes me quite sad and afraid. For the first time ever, I fear the scarf I wear on my head may bring harm to my children. They do not look foreign, my girls and my son are all fair skinned. I wonder if they are treated differently once they see I am their mother? They haven't mentioned any negative incidents and I pray they don't encounter any hateful actions towards them. I have never been worried about my scarf because it has never mattered before. I have, maybe in total, encountered about 4 negative attitudes and comments about my appearance. Even after 9/11, when other Muslim women were taking off their scarves, I decided to put mine on. People asked me back then, "Aren't you afraid?" I answered "no" because what happened then didn't represent me or my faith. I wore my scarf proudly. I have managed to eke out another post! To say that getting to the blog has been difficult is an understatement. Life doesn't stop. What worries me a bit is that we don't celebrate Christmas; I couldn't imagine the craziness if we did. I have to applaud all my blogger friends who are posting regularly with fabulously, delicious dishes and getting ready for their biggest holiday of the year. I am in awe of your organisation, planning and perseverance! I haven't been able to get really back in the kitchen yet. The winter times don't help either. The sun goes down at 4.44 here and I have barely picked up the kids from school and got them home when I have to start with dinner. By the time I finish cooking, it's time to eat and get ready for bed; no time to set up a studio with hungry children staring you down. Last week was difficult anyway with one stray event for work still remaining. I psyched myself up to plan and cook after having about 3 weeks of downtime. Hello my lovelies! How have you all been? I hope you are reading this in your inbox because it's been so long since I last wrote anything, I'm not sure if my post was even sent out! It's a bit rusty from the under use. This post was written right after Thanksgiving but as you can see, it's been languishing in my drafts for over 10 days now. I'm going to go ahead and just post it, even though Thanksgiving is old news. So, how was everyone's Thanksgiving? Well, by everyone, I mean all the Americans. We had a very wonderful and quiet one. This year we opted out of the friendsgiving. My husband was off for four days and so were the older girls who work for a daycare/school. The children didn't want me to host and they didn't want to go anywhere, but of course, they wanted me to cook. And here I was thinking I'd escaped the cooking. No such luck. They all handed in their food requests: creamed corn, sweet potato casserole, cauliflower and broccoli casserole, pumpkin pie, and pecan tart. The start of the 2015 NFL football season, as exciting as it's been this week, has kinda thrown a spanner in the works. My posting schedule has gone quite awry even though lately, it seems I don't really have any kind of a schedule! My usual post day is Tuesday and that means, because I'm far from being that blogger who has scheduled 20 posts out, inevitably on Monday night, I'm scrambling to finish either the editing of my photos, writing my post or typing out my recipe. However, Monday night there is Monday Night Football and I like to watch it, especially if my team is playing. That doesn't allow me to finish my post. Then Tuesday night, I prep for my cooking/use/care class at work and also prep dinner for the next day for the kids. This doesn't help with post writing either. Wednesday night I'm at work till after 9 and when I get home, the last thing I want to do is sit in front of a computer. Thursday I'm exhausted from Wednesday and then there's more football; I like to watch. This doesn't help with post writing. So, here I am on Friday.
